summer loving

It is finally that time of year, summer is finally upon us and it is time to rejoice in everything this beautiful season has to offer. As I am a food lover, I of course take pleasure in the knowledge that I can finally indulge in all my favourite summer-time recipes. If you take a look at the ‘Summer’ section of my cookbook you will find some great ideas for your nights in, garden parties or, if you are like me, morning brunches! My chia seed and granola breakfast pots make a great breakfast whether you are cooking for two or twelve. If you are looking for something to entertain guests in the evening, why not try my quinoa salmon and avocado sushi rolls, healthy and delicious! Or if you are looking for something more light and fresh, my cucumber and dill salad is nutritious and refreshing at the same time, perfect for those hot summer evenings.

We all need something to cool us down when the weather is sweltering and as refreshing as an ice cold glass of water is, there is something special about a cold ice cream or sorbet. My personal favourite is my frozen berries and coconut sorbet. You just can’t beat a frozen treat in this heat!

Of course I understand that summer-time is not all about the food. It is a time to relax and enjoy the warmer weather and the beautiful outdoors. Usually, for us Brits, summer-time has many connotations but hot weather is not one of them! It seems that this year it’s different, we are benefitting from what summer truly means, sun!!! When I am not busy at work I love laying in my garden and feeling the warmth of the sun on my skin, there really is nothing like it.

Everything gets better when the weather is good. At the top of the list has to be exercising. There is something so great about going for an early morning run when the weather is beautiful and the temperature is perfect, before it gets too hot. Coming back, showering and starting my day after a morning run always makes me feel good and like I can achieve anything.

For us girls, summer gives us the opportunity to make the most of our summer wardrobes that get hidden away most of the year. I love getting out my summer dresses and dressing them up when I go out. It makes a change to boring jeans that I usually wear.

Last, but not least, summer inevitably means holiday. Whether it is kids breaking up from school for the summer, parents taking time off work or actually travelling to another country. Summer is associated with rest, relaxation and recuperation and that is a big part of the reason it is my favourite season.
