LISA’S TIP – If you are unable to get a skillet pan, the cake can be cooked in a 9-inch loose bottom spring-form cake tin. Pre-line the base and sides of the tin with parchment paper. Serving from the oven to the table in the skillet pan is a great show stopper with a large dollop of ice-cream in the center. Alternatively, you can serve this cake for tea when cooked in a cake tin. If you are making this cake in advance I would suggest heating in a pre-heated oven before serving, especially if you’re baking in the skillet pan.
