Comfort food can look appealing, too. Prepare in ramekins and serve individually for a more sophisticated look.

Instructions
  1. Core, peel and roughly chop the cooking apples.
  2. Place in a saucepan with approximately 150ml water, just enough to cover the apples, together with 2 tbsp honey (depending on the sharpness of the apples).
  3. Bring to a boil then cook over a low heat until the apples are stewed, approx. 10 minutes.
  4. Remove from heat and allow to cool for 10 minutes, then transfer into an 18cm Pyrex bowl.
  5. Using an electric mixer or by hand, cream the margarine and coconut sugar until pale and fluffy. Then beat in the eggs a little at a time.
  6. When both eggs are incorporated, carefully and lightly fold in the sieved ground almonds.
  7. Spread this mixture carefully over the apples, and even out the surface with the back of a tablespoon.
  8. Bake on a middle shelf for 30-40 minutes. Serve hot or cold with coconut yogurt.
Recipe Notes

LISA’S TIP - Can also be served with banana ice cream. Once cooled, it will keep in the fridge up to 4 days. You can also try different variations of fruits: rhubarb, plum, peaches, apricot or pear! This is a perfect dessert for guests who are wheat or gluten intolerant.
