Blueberry Chia Seed Spread

How simple is it to make you own jam with added superfood benefits! You can be adventurous with your choice of fruit once you tackle the simplicity of making healthy eating fun!

{2 x 30oml kilner jar}


400g blueberries

100ml maple syrup, agave nectar or honey

1 tbsp. lemon juice

½ vanilla pod, deseeded

1 tbsp. cold water

4 tbsp. chia seeds

serving suggestion

creamy oat fraiche (I recommend the brand Oatly)

Preparation time – 30 mins, refrigeration 6 to 8 hours (overnight)

In a small saucepan add the blueberries, agave nectar, lemon juice, vanilla and water. Bring to a boil, and then simmer on a low light for 20-25 minutes.

Remove from the heat and cool for 5-10 minutes. When the mixture has cooled, add the chia seeds and stir until mixed thoroughly. Pour into a sterilized kilner jar and refrigerate overnight to set. The jam will last in an airtight container in the fridge for about a week.

LISA’S TIP – I can literally eat this straight from the jar or stirred through yogurt! Or make homemade nut butter and serve on toast, a healthy version or peanut butter jelly sandwiches.
